Ben Lomond is a cashew nut cheese version of Blue Brie, soft with blue cheese nores and a traditional bloomy white mould rind, layered with Tasmanian vine ash. It has a soft, creamy texture and a flavour profile which is characteristic of cheeses made with Penicillium candidum.
