‘Tuna’ lettuce boats

Ingredients
6 cos lettuce leaves
400g can chickpeas, drained
400g can corn kernels, drained
¼ red onion, diced
1 tomato, diced
½ cucumber, diced
1 tbsp Mayvers Hulled Tahini
½ tsp garlic powder
3 tbsp Kewpie No Egg Mayonnaise
½ lime
½ tsp chilli flakes
¼ cup alfalfa sprouts
Salt & pepper
Directions
- Using a fork, lightly mash the chickpeas in a bowl.
- Add red onion, tomato, corn and cucumber to the bowl and stir until mixed in well.
- Add Mayvers Hulled Tahini and Kewpie No Egg Mayonnaise and stir until mixed in well.
- Squeeze lime over the mixture, then add garlic powder and season with salt and pepper to taste. Mix well.
- Spoon the mixture evenly into the lettuce leaves. Sprinkle chilli flakes and alfalfa sprouts on top to finish.
